Instructions. Pour four cups of milk into a quart-sized glass jar. Sprinkle the entire contents of one Easy Kefir packet into the jar. Mix well with a spoon and put a secure lid on the jar. The lactose in animal milk provides the most efficient food source for the Kefir Grains and therefore the most efficient and effective culturing process. In other words, kefir is the drink, but kefir grains are the starter culture that used to produce the beverage. The grains’ lactic acid bacteria turn the milk’s lactose into lactic acid. The most likely reason is that there are only 10-15 strains of good bacteria and good yeasts in water kefir made with live grains. This compares with the 30 to 50 in homemade milk kefir made with live grains.
